Chianti Classico D.O.C.G.The organoleptic characteristics of our Chianti Classico depend on the climatic conditions of the year of production. We offer this wine as the result of the adaptation of the most ancient rural traditions, and of a continuous search for new sangiovese varieties and new methods cultivation.
After a year from the vinification, we add 10% of merlot to the sangiovese that has been already aged in barriques for one year.
The wine initially has a vivacious ruby red colour evolving to garnet through aging, with presence of persistent border colour and legs formed on the glass indicating the wine's good consistency. This wine has a intense, persistent, fine, earthy perfume with a scent of sweet violet and fruits, and is suitable for aging. It has a dry, warm, velvety, soft, well-balanced and well-structured taste.
Fined in bottles from 3 to 6 months. To be stored horizontally in bottles. Perfect with red meat, game and mature cheese. |

Vin Santo di Chianti ClassicoOur vin santo is made following the most antique rural traditions. It is made from a selected picking of trebbiano and malvasia grapes which are allowed to dry until the month of February, then pressed and ged in oak casks for three years in our vin santo rooms. This oenologic practice gives to our vin santo a bright and intense, light amber colour, with earthy and intense perfumes and a sweet taste. Optimal as dessert wine. |

Grappa di Chianti ClassicoOur grappa is distilled from our Chianti Classico marc and bottled by a distillery of our village.
In appearance, our grappa is crystalline in terms of its transparency and its colour.
Its olfactory qualities are discrete and elegant, and its bouquet combines the typical richness of Chianti wines with delightful overtones.
Its taste is soft, harmonious and well-balanced. Its longevity confirms the organoleptic characteristics of a fruit-jam fragrance in its bouquet. |

Chianti Classico Extra Virgin Olive Oil DOPWe produce our olive oil from our olive trees in the Chianti Classico territory. For optimal taste and perfume, we crush the olives and extract the oil using the cold-press process.
The Chianti Classico DOP olive oil is obtained exclusively from olives that are planted in the Chianti Classico territory. The production of this olive oil must be carried out following the rules set forth by the Chianti Classico Consortium. The olives have to be milled not later then 48 hours after picking and filtration of the olive oil is obligatory. We have to send samples and results of chemical analysis to the Chamber of Commerce in order to obtain permission to bottle under the protected denomination of origin classification (D.O.P.) Chianti Classico DOP olive oil is characterised by good fruity flavour, with scents of raw artichoke and fresh grass and a delectably spicy aftertaste. |
